English Breakfast
A Ceylon black tea blend whose prototype was apparently developed over a hundred years ago by the Scottish Tea Master Drysdale in EdInburgh. It was marketed simply as "Breakfast". It became popular in England due to the craze Queen Victoria created for things Scottish.  As its name implies, English Breakfast tea is an ideal accompaniment to a morning meal. It is generally offered with milk.

China Black (Red) Teas


In most Asian countries, black tea is refered to as red tea. As well, the Rooibos plant of the Aspalathus genus, found in the Cederberg mountains of South Africa has leaves that can be made into an infused drink or tisane. Rooibos is often commercially marketed as Red tea. Technically, Rooibos is not a true tea since it does not come from the tea plant Camellia Sinensis

Sometimes referred to as Smoke Tea, the tea leaves have been withered over pine or cedar fires, pan-fired, rolled and oxidized before being fully dried in bamboo baskets over burning pine.

Assam Teas


Teas mainly fall under the genus Camellia Sinensis , Assam is the only other variety and is under the genus Camellia Assamica.
Assam is a black tea named after the region of its production: Assam, India. This tea grown at sea level is known for its body, briskness, malty flavor, and strong, bright color. Assam teas, or blends containing Assam, are often sold as "breakfast" teas. English Breakfast tea, Irish Breakfast tea, and Scottish Breakfast Tea are common trade names.

This is a full bodied tea that has excellent color in the liquor. The leaf is quite small which adds to the strength of the cup.
This organic Assam has all the characteristics that makes this 2nd flush Assam a great tea. Quite often milk is used to tone down the strength of the tea since milk gives the tea a smoothness that is very pleasant and highlights the malty notes.

Darjeeling Teas


Darjeeling tea, tea from the Darjeeling region in West Bengal, India, has traditionally been prized above all other black teas, especially in the United Kingdom and the countries comprising the former British Empire. When properly brewed it yields a thin-bodied, light-colored liquor with a floral aroma. The flavor also displays a tinge of astringent tannic characteristics, and a musky spiciness often referred to by tea connoisseurs as "muscatel." A sweet cooling aftertaste should be felt in the mouth.

The Blue Mountains' or the Nilgiris are situated in Southern India. A picturesque range of undulating hilly landscapes where tea is grown at elevations ranging from 1000 meters to above 2500 meters.

This is a Nilgiri Tea from South India, grown at 5000 feet above sea level.
The tea has an interesting fruity floral-like maltiness, that is unique to teas from the Nilgiri area of India. It is a stronger tea suitable for breakfast time.

For Hot Tea: Bring fresh drawn water to a boil. 1 heaping teaspoon per cup. Let steep for 5-10 minutes. Add milk & sugar before or after steeping.
