This week's tea lesson was about grades of tea. I have learned it from reading books but my teacher explained this at a much deeper level. I am glad that I have decided to take this course.
The tea tasting included 5 different grades of black tea from Assam, India. They all looked different. I carefully measured the tea leaves for 2 grams each. I used 6 oz of boiling water and steeped for 4 minutes.
The deep coloured tea was strong and even a little bitter. The lighter coloured tea was smooth and had a complex taste. I would describe it as honey or malty.
When I added milk to them, they turned different colours as well. When steeped, the broken leaf tea was stronger and took milk better than the higher grade tea.
Next week is exam, already!
